Vinification & aging

Grapes arrival

The grapes, fully ripe, are destemmed and gently crushed, leaving the skins in contact with the must for a period varying from 3 to 7 days depending on the vintage


Fermentation

After maceration and once racked, Stragaio continues its second part of fermentation in both new and old French oak tonneaux


Maturation

In tonneauxon fine lees for 24 months, and 12 months in bottle

Stragaio is a unique expression of the Stracacio vineyard in Spescia, but made special by the long aging in wood, as happens for the Gaiospino Fumè

Organoleptic profile

On the nose, very elegant notes of fruit and flowers, followed by sweet oak notes, then veering towards an unexpected herbaceous tail

The palate is well-structured, displaying a very elegant tannic texture, amplified by a lovely vibrant sapidity. It shows a remarkable persistence, continuing on the trail of elegant oak notes combined with a balsamic finish


Temper

Lo Stragaio has a tempered character derived from maceration, with an elegant lightness and complex structure, all result of the soil from which it comes and the wood in which it is aged. Among our wines, this is the one that best captures the story of a vintage at its fullest

Aging potential: 10 years and more

Formats: Standard (0.75 l), Magnum (1.5 l) and Jeroboam (3,0 l)


Pairings

Very suitable for stuffed pasta, creamy risottos with earthy combinations, elaborate white meats such as rabbit in porchetta, and medium and long-aged cheeses
