The Cenobita TerrAria is the last chapter of a trilogy of wines dedicated to the 2019 vintage. Obtained from grapes attacked by noble rot, fermented in cocciopesto and aged in french oak, it combines the mouldy notes with a dry palate, displaying great richness and aromatic overlapping

Vinification & aging

Grapes arrival

In the 2019 vintage, the grapes were attacked by noble rot in late September-early October. To preserve this precious characteristic, the harvest required extensive manual bunch cleaning and very low must yields, obtained through gentle pressing and static decantation

Spontaneous fermentation in Cocciopesto amphorae


Maturation

In Cocciopesto amphorae on the fine lees for 24 months (Terra), another 24 months in French oak tonneaux (Aria), and 24 months in bottle

Given the particular nature of the climatic conditions and the characteristics of this vintage, no blends with other types of wine were made

Organoleptic profile

The nose is elegant and austere, distinctly revealing sweet spices. Hints of jammy fruit and honey flow, followed by creamy notes of petit fours and a balsamic finish

The palate is strong and enveloping, featuring licorice root, candied citron, honey, and jammy fruit, framed by delicate tannins and a firm, surprisingly savory finish


Temper

Despite its sweet aromas, this wine commands respect on the palate, displaying great mettle but also agile elegance and aromatic layering
