Gaiospino Fume' is born from the same matrix as Gaiospino, usually following a much longer path. Fermented and aged entirely in oak barrels, it is a Castelli di Jesi of great depth and personality, unafraid of time or strong pairings

Spontaneous with indigenous yeasts in french oak tonneaux, new or used


Maturation

Exclusively in tonneaux,, without any racking for at least 24 months on the fine lees before bottling


Blend

The result of the expression of the single vineyard of Gaiospino, it represents an even more particular version, made so by the exclusive presence of oak as a material for refinement, also adjusted by an organoleptic selection before going into the bottle

Organoleptic profile

The nose has an elegant and layered vigor, with intense aromas of yellow fruit, candied citrus, and yellow flowers. Further down, delicately emerge the notes of the long aging in barrels: butter, honey, and vanilla, finishing with an unmistakable and elegant smoky note (fume')

The palate is voluminous, warm, and enveloping, counterpointed by a pronounced acidity and a decisive savory character, typical of Verdicchio. The finish is persistent, clean, and with a return of toasted notes
