Macerato is our idea of ​​an orange wine. It shares the same primary matter as Stracacio, but follows a diametrically opposed aging process. It's a wine that plays on the contrast between the strength of maceration and the elegance of controlled oxidation

Macerato is made from the grapes grown in the Stracacio vineyard, located in Contrada Spescia (Cupramontana), adjacent to the Gaiospino vineyard

Spontaneous grass covercrop, no fertilization, manual pruning with double and single Guyot and manual and mechanical management under the rows

Vinification & aging

Grapes arrival

The grapes, fully ripe, are destemmed and gently crushed


Fermentation

Spontaneous, leaving the skins in contact with the must for 5 days, then finishing fermenting without skins in concrete tank


Maturation

Exclusively in concrete on the fine lees for 24 months, and 18 months in bottle


Blend

Macerato constitutes a special wine, always an expression of the single vineyard of Stracacio , but refined exclusively in concrete in an oxidative environment with its fine lees, with very low levels of sulphites in the bottle (30 mg/l)

Organoleptic profile

On the nose vivid aromas of medicinal herbs, a delicate trail of spices, and caramelized notes on the finish

Immediate on the palate, with a rich entry followed by a delicately savory ending, where spices and honey stand out, followed by herbaceous and balsamic aromas. The palate is intense and warm, with a clean and slightly tannic finish


Temper

With its characteristic evolved profile, it is a wine of great depth and complexity, with a sweet texture that progressively changes in the glass

Aging potential: 5 years and more

Formats: Standard (0.75 l), Magnum (1.5 l) and Jeroboam (3,0 l)


Pairings

It pairs well with complex, spicy and asiatic dishes and washed-rind cheeses. It's also perfect as a meditation wine, for those who seek the boldest expressions of the region
