Stracacio

Stracacio is a wine born from an exceptional vineyard, with a macerated on the skins during fermentation. This is the wine Lucio was most fond of, and along with Gaiospino, it has brought prestige to Fattoria Coroncino and spread our philosophy around the world.

Terroir & vineyard
The Stracacio vineyard has a unique history. Born from a massal selection, its Verdicchio clone has stood out yielding exceptional results. For that reason, it was decided to plant it in the Contrada Spescia plot (Cupramontana) adjacent to the Gaiospino vineyard

In the long rows of the Stracacio vineyard, we practice spontaneous grass covercrop, no fertilization, manual pruning with single Guyot and manual and mechanical management under the rows

Vinification & aging
Grapes arrival
The vineyard presents a very significant disparity in ripening, and we begin harvesting when it reaches the right balance between the bunches that are still slightly unripe and those that are already tending to dry out. The grapes are then destemmed and gently crushed, leaving the skins in contact with the must for a period varying from 4 to 7 days depending on the vintage
Fermentation
Stracacio is our natural pied de cuve: as the first to begin spontaneous fermentation, it serves as the base for the indigenous yeasts that will initiate the fermentation of all the other musts in the cellar. Once separated from the skins, the must finishes fermenting in steel and concrete tanks
Maturation
In steel tanks on the fine lees for 2 years, and at least 6 months in bottle

Likewise Gaiospino, Stracacio is the fruit of a single vineyard to allow the wine to express its own inclinations

Organoleptic profile
Nose of ripe yellow fruit, citrus and flowers, then proceeds with notes of medicinal herbs and sweet spices. With age in the bottle, evolves into elegant hydrocarbonic notes, typical of a grand Castelli di Jesi
The palate is complex, with a creamy and enveloping delicacy punctuated by an energetic freshness and vibrant salty character, building towards a tense ending with a dry, almondy finish characteristic of the variety
Temper
A wine deep, textured, and vigorous, balanced between softness and firmness. Maceration on the skins extracts not only color and light tannins, but an aromatic complexity that makes it extremely territorial and authentic
Aging potential: 10 years and more
Formats: Standard (0.75 l), Magnum (1.5 l)

Suitable for structured dishes, tasty fish soups, elaborate white meats and medium-aged, blue cheeses or pit cheese
