Terroir & vineyard

Bambule' comes only from the dried grapes of the Stracacio vineyard in Contrada Spescia (Cupramontana), next to the Gaiospino vineyard

Vinification & aging

Grapes arrival

The grapes are left to dry naturally on the vine without cutting the branch until harvest, which typically occurs in mid- to late October


Fermentation

Given the very low yield, the grapes are destemmed and gently crushed, allowing the initial stages of spontaneous fermentation to take place in contact with the skins. Vinification is completed in french oak barrels


Maturation

In barrique for 5 years, with 2 months of aging in bottle

Organoleptic profile

On the nose, aromas of wild honey, beeswax, barley sugar, quince jam, dried mushrooms, and moss

The aromas of the nose return on the palate, with a stunning finish of almonds and calvados, caramel, and licorice root

Temper

Bambule' is a persuasive wine, which combines an oxidative profile from drying on the vine with an ethereal and elegant character on the palate, not at all cloying

Aging potential: 3 years

Formats: bottles of 350 ml


Pairings

Gentle enough to finish elegantly a meal with dry biscuits made with almonds, hazelnuts or chocolate, it also pairs well with mature and blue cheeses, until becoming the perfect end to a meal by itself
